The design of the new Millennium dining room was intended to show that Millennium has grown-up. After living in a subterranean space in a residential hotel on the rag-tag side of the Civic Center, Millennium has now moved to the outskirts of Union Square on a block with three sensational big-name restaurants nearby (Asia de Cuba at the Clift, the Grand Café at the Hotel Monaco, and the soon-to-open Cortez at the new Hotel Adagio) as well as a dozen great ethnic restaurants around the corner. In creating the new space, designer Charles deLisle of Your Space Interiors intended to merge Millennium's environmentally-sensitive philosophy with the history of this restaurant as a well-known upscale French bistro.

Charles says, "Since the restaurant's food is based upon sustainability, we chose to make sure the design could say the same thing." The handsome "fishnet" chandeliers started life as humble paper sacks, and the curtains were woven from recycled plastic bags. Even the upholstery is animal cruelty-free... a faux leatherette rather than actual leather. This philosophy is carried through to the secluded booths which are styled with "faux lizard" fabrics.

The zinc-topped bar still dominates the space but the overall coloring of the walls in the deep, rich reddish brown hues of the earth provides a balance and a sense of tranquility. And, the new Wine Room for private events feels a harmonious and discreet little hiding places for small groups.

Charles deLisle is a principal with Your Space Interiors, a company that specializes in hospitality and residential design (the company did the interior design for Joie de Vivre's Kabuki Springs and Spa and Costanoa lodge and camp projects). Charles' talent derives from an education in the fine arts including work in sketching, ceramics, welding and custom furniture design. He has created a personal line of table lighting and done free lance work for Pottery Barn, Stanlee Gatti designs, and Seascape lighting.
